Mat McLean is regarded as one of New Zealand’s leading chefs, Palate is one of the country’s most awarded restaurants, and it wears a Cuisine Awards hat. Mat is pretty modest about his accolades and all his framed certificates are actually stashed away in a box! He gained his qualifications at Waikato Polytechnic, was awarded a scholarship to work in the UK where he gained valuable experience in the kitchen at two of London’s most prestigious restaurants, Leith (one Michelin star), and The Capital Hotel (two Michelin stars). He was later head chef at Middle Brighton Baths, Melbourne, (a one-hat restaurant), and in 2005 returned to his hometown, Hamilton and established Palate Restaurant in the city’s southend. He later moved Palate to vintage premises in Alma St, and more recently to SkyCity, in the heart of the CBD, where he and business partner Larissa Muller marked Palate’s 20th anniversary in February 2025. Mat is known for his technical skills, and his commitment to cooking local and seasonal produce. He’s developed a great group of regional suppliers and is intensely loyal to them. He’s constantly switching up the menu to showcase all the good things they have to offer. He also values his loyal customers who’ve been eating at Palate from day one, and he welcomes new faces through his front door. He shrugs off the fine-dining label that is sometimes mistakenly attributed to Palate: “We’re not like that, we’re very relaxed here.” Mat describes his food as honest and confident. He cooks with care, with well-considered flavours, and the dishes that come across Mat’s pass are never over-worked or manipulated. “If you’ve got great produce, you’ve got nothing to hide. It’s all smoke and no mirrors here. When chefs talk about a food epiphany, something they’ve tasted that’s incredible, it’s usually something really simple.”

Palate’s restaurant manager and part owner, Larissa Muller has been at Palate since 2013. Originally from Brazil Larissa has called New Zealand home since 2006. With extensive experience in hospitality, Larissa is a certified sommelier, currently studying for an international-standard sommelier qualification. Larissa is responsible for Palate’s highly regarded wine list, with its focus on the best vintages from New Zealand’s wine regions, as well as some beauties from the rest of the world. There is always something special in Palate’s cellar. In 2024 Larissa was the recipient of Cuisine Magazine's Sommelier & Wine Experience of the Year award in 2025 she was named one of NZs top 10 women Sommelier.

ABOUT PALATE

Palate was founded in 2005, it is a keeper on Hamilton’s menu of great places to eat,  independently owned and operated by locally trained chef Mat McLean and his business partner (and sommelier) Larissa Muller.

In 2024, Mat and Larissa moved Palate to the SkyCity building, in the heart of the CBD. This was an opportunity for them for to offer a more flexible menu, and four different dining spaces. There is the street-front courtyard, two indoor rooms, and another casual nook in the SkyCity atrium, directly under the unique (and magnificent) glazed roof dome, a design feature of the building that was once Hamilton’s Chief Post Office. The atrium seating includes Palate’s chef’s table, in direct sight of the kitchen, the engine room designed by Mat where the South American-style asada grill occupies prime real estate.

Mat cooks from scratch each day on the grill, his menus influenced by local availability. If boxes of white asparagus, globe artichokes, or whitebait, flounder, or similar, unexpectedly turn up from a supplier, he’ll tweak the menu and put them straight on his customers’ plates.

He has visited farms, horticulture blocks and beaches to learn first-hand about the food he cooks and his dishes showcase the best of the Greater Waikato’s fruits, vegetables, truffles, meats, seafood, and cheese. Other quality suppliers from the rest of the country are brought onboard as needed.

Mat describes his food as “complicated simplicity”, produce-driven and highly innovative but not fine dining: he wants customers to feel at home, to pick up a lamb cutlet in their fingers, to mop up the last bit of sauce with sourdough, to laugh out loud, and to enjoy Palate’s perfect mix of excellent food, drinks and service.

Palate’s longevity and creativity is particularly notable in a hotly competitive industry, and top hospitality commentators commend it for this. Mat and Larissa say it’s down to them valuing their staff, customers and suppliers, listening to feedback, and adapting to changing times.  And Palate is exactly the kind of place that they’d like to eat at themselves.
